You’ve witnessed my obsession for great salads on this blog before. I love how creative you can get putting together the leafy ensemble of greens, and colorful combinations of fruits, nuts, and veggies. In a recent Pinterest search, I sought out the most beautiful fall salads for inspiration. I wanted to find something easy, vibrant, and healthy to compliment my new Ironwood Gourmet acacia wood bowl. I ended up with this lovely variation of a salad I found online and the response from my friends and family was unanimously positive.
I’m calling it the Easiest Fall Salad because it’s so simple to put together and you can recreate it with as many variations as you please. I put it together super quick as we ran out the door to gather at a friends house for a Halloween pot luck. It took less than ten minutes to make and was a huge success. In fact, I completely eyeballed the dressing and it was also a big hit.
Have you ever built your food around your dishes? Guilty. This was the first time I sought out a salad to perfectly compliment the acacia wood in this Ironwood Gourmet bowl. Sorry, not sorry. It was a total score. Tasty on the palate and beautiful in photos. Read on below for the full recipe.
1 large container of organic 50/50 (Spinach and Spring) salad mix
1 Green Apple
2 tbsp Dried Cranberries
1 tbsp Dried Cherries
1/2 cup Blue Berries
1/2 cup Chopped Walnuts
Feta Cheese (not seen here)
1/4 tsp of Sea Salt
Pour greens into bowl. Thinly slice the apple, cut in halves and spread throughout greens. Thinly slice the plum, cut in halves and spread throughout greens. Add blue berries, dried fruit, and walnuts to top it off. Add feta cheese as desired. Lightly salt the combination to bring out flavor.
(I eyeballed the dressing because I was in a hurry but this is round about what I used)
1 cup Apple Juice
1/2 cup Apple Cider Vinegar
1/2 cup EVOO
1 tbsp Honey
Pinch of Salt
Combine and mix up. Drizzle lightly over salad.
Alternative combination ideas would be to add figs (which I couldn’t find), prosciutto, and maybe switch up the cheese to bleu? Also how yummy would this be with rosemary focaccia bread on the side with olive oil and balsamic vinegar? I’m getting hungry just thinking about it. We paired this with my go-to white wine of choice, a New Zealand Sauvignon Blanc, but I’d love to hear what you’d pair it with.
